Roasted Curried Eggplant

INGREDIENTS

2 Large Eggplants
1 Large Red Onion
3-4 Dried Red Chillies
2 Tbsp Vegetable Oil
1/4 tsp Ground Ginger
Salt to taste

DIRECTIONS

1 - Preheat Oven to 400°F
2 - When the oven is hot, place eggplants in the oven on a lined baking sheet. Let cook for 1 hour.
3 - Remove Eggplants from oven, let cool.
4 - Scoop the cooked eggplant out of it's skin using a spoon into a holding dish.
5 - Slice Onions. Cook in oil till translucent.
6 - Add the red chillies, ginger, salt and Eggplant. Cook for a few minutes, till blended. Remove from heat and server with bread.

COMMENTS

This is a great dish - and even though the eggplants take a while to cook in the oven, it takes relatively little time to put together. I very the spices every time I make it. The results are always good.

The key to a good eggplant is to not introduce any water to the dish. If you have to use water, then you have to drain it for a long time...
